What is ELAIDIC ACID?

A white crystalline stereoisomeric form of oleic acid, obtained by the action of nitrous acid upon that substance at 200 degrees C. in the presence of sulphurous acid or sodium bisulphite. It melts at 51 degrees to 52 degrees C.
